🥔 Rustic Oven-Baked Potato Wedges (Simple & Perfect Every Time)

If you’re looking for a fast, reliable, and delicious side dish, rustic oven-baked potato wedges are always a win. They’re crispy on the outside, soft inside, and require almost no effort — just a few pantry spices and a baking tray.

This recipe is perfect for busy days when you want something homemade without spending too much time in the kitchen.

⭐ Ingredients

  • 6–8 medium potatoes (skin on)

  • 2–3 tbsp vegetable oil

  • 1 tsp salt (adjust to taste)

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp black pepper

  • Optional: dried herbs like oregano, thyme, or rosemary

🔪 Preparation

  1. Preheat the oven to 350°F (175°C).

  2. Wash the potatoes thoroughly — no need to peel. Cut them into thick wedges.

  3. In a bowl, toss the wedges with oil, salt, paprika, garlic powder, black pepper, and any herbs you like. Make sure each piece is well-coated.

  4. Spread the potatoes on a baking tray in a single layer, preferably skin-side down.

🔥 Baking Time (Important!)

Place the tray in the oven while it’s at 350°F,

then immediately switch the temperature to 400°F (200°C).

  • Total baking time: 35–40 minutes

  • The oven heats from 350° to 400° during the first few minutes, and the potatoes finish crisping up at full temperature.

If you prefer a darker, crispier finish, leave them closer to 40 minutes.

🍽️ Serving

Serve hot with your favorite dipping sauce, sprinkle a little extra salt or herbs on top, and enjoy! These wedges pair well with everything — from roasted meats to quick sandwich lunches.
