Rustic Roasted Potatoes with Whole Cranberry Glaze 🍂🥔
If you love cozy, flavorful dishes that feel both rustic and a little fancy, this one’s for you. These rustic roasted potatoes get a beautiful golden crust in the oven and are finished with a sweet-and-tangy whole cranberry glaze that will make your taste buds dance. Perfect for a cozy dinner, holiday table, or just a treat for yourself.
Ingredients (Serves 2–3)
For the Potatoes:
-
5–6 medium potatoes, cut into wedges (keep the skin on for extra texture!)
-
2–3 tbsp olive oil
-
1 tsp paprika
-
½ tsp garlic powder
-
½ tsp salt
-
Freshly ground black pepper, to taste
-
Optional: a pinch of dried thyme or rosemary
For the Cranberry Glaze:
-
3–4 tbsp whole cranberry sauce
-
1 tsp honey or sugar (optional, for a sweeter touch)
-
1 tsp lemon juice
-
A pinch of salt
-
1–2 tbsp warm water to thin, if needed
Instructions
1. Prep the Potatoes
Preheat your oven to 400°F (200°C). In a large bowl, toss the potato wedges with olive oil, paprika, garlic powder, salt, pepper, and herbs (if using). Arrange the potatoes on a baking sheet in a single layer.
2. Make the Cranberry Glaze
While the potatoes are roasting, mix the whole cranberry sauce with honey, lemon juice, salt, and warm water in a small bowl. Stir until smooth and glossy — this will be your beautiful glaze.
3. Roast and Glaze
-
Roast the potatoes in the oven for 25–30 minutes.
-
Remove from the oven and toss the wedges with the cranberry glaze so every piece gets coated.
-
Return to the oven for another 10–15 minutes, until potatoes are golden, slightly caramelized, and the glaze is bubbly.
💡 Tip: For extra crispy edges, turn on the broiler for 1–2 minutes at the end — just watch closely so the glaze doesn’t burn.
Serving
Serve these rustic potatoes warm, drizzled with any extra glaze you have left. They’re perfect alongside roasted chicken, turkey, or even as a hearty vegetarian side. Sprinkle with fresh parsley or thyme for a fresh pop of color.
