🍎 Simple Yogurt Apple Cake (Super Soft & Easy)

There’s something special about a warm apple cake — the kind that fills the kitchen with a sweet, cozy smell and comes out soft, golden, and full of tender apple pieces. This recipe is exactly that: simple ingredients, quick prep, and a perfect everyday dessert.

I made it using only basics I already had at home: apples, flour, sugar, eggs, yogurt, milk, and a splash of oil. No butter needed — the yogurt keeps it super moist and light.

⭐ Why This Apple Cake Works

  • Soft & fluffy thanks to yogurt

  • Golden top without using butter

  • Works in any baking dish

  • Beginner-friendly — you literally mix everything in one bowl

  • Balanced sweetness with juicy baked apples inside

🧾 Ingredients

  • 3 medium apples, peeled and chopped

  • 2 eggs

  • 100–120 g sugar (½ cup; adjust to taste)

  • 200 g all-purpose flour (about 1 ½ cups)

  • 1.5 tsp baking powder

  • 100 ml milk

  • 100 g Greek yogurt (5–6 tablespoons if yours is semi-liquid)

  • 70 ml vegetable oil

  • Pinch of salt

  • (optional: cinnamon, vanilla, lemon juice)

👨‍🍳 Instructions

1. Prepare the apples

Peel and chop the apples into small cubes.

If you have lemon juice, splash a tiny bit on top to prevent browning.

2. Make the batter

In a bowl:

  1. Whisk eggs, sugar, and a pinch of salt until slightly foamy.

  2. Add the yogurt, milk, and oil — mix until smooth.

  3. Sift in the flour + baking powder.

  4. Mix until the batter looks like thick sour cream.

3. Add the apples

Fold in about half of the chopped apples.

The other half goes on top for a nice rustic look.

4. Bake

  • Pour the batter into a baking dish lined with parchment or lightly oiled.

  • Distribute the remaining apples on top.

  • Bake at 180°C (350°F) for 40–45 minutes in a preheated oven.

If you start from a cold oven, bake 50–55 minutes total.

  • The cake is ready when the top is golden and a toothpick comes out clean.

5. Cool & glaze (optional)

Let it rest 15 minutes so the texture sets.

You can drizzle honey, maple syrup, or a simple sugar glaze on top.

🍽️ Result

A soft, moist apple cake with a golden crust and juicy apple pieces throughout — perfect for breakfast, tea, or a quick dessert. It’s simple, home-style, and works every time.
